Pumpkin Soup
Serves 4-5
Ingredients
- 1 Kg Pumpkin
- 1 Peeled Courgette
- 2 teaspoons of Philadelphia cheese
- 1 Onion
- Olive Oil
- Salt
Preparation
- Boil the pumpkin, courgette and onion for about 20 minutes
- Add salt to season
- Once the vegetables are cooked, remove any excess water to obtain a perfect soup density
- Blend the vegetables and add the olive oil and the Philadelphia cheese
- Pour into a bowl
- Create a fun face on top using a piece of carrot for the nose, peas for the eyes, string beans for the hair and some pieces of mozzarella for the mouth
